Autumn Recipes that Nourish & Comfort

The air is finally feeling crisp and we’re all ready to cozy up in our fuzzy blankets while sipping on our favorite tea! The Sol team is welcoming November with open arms as we savor the last two months of 2024 and get ready for a whole new year ahead. The best part of the chilly season is the warm, nourishing foods and drinks that are not only comforting for the soul, but so good for the body! Keep reading for 3 autumn recipes that are near to our hearts (and stomachs).


 

Nothing says “fall” like a good soup recipe, so why not begin with a twist on a New Mexican fan favorite - enchiladas!


1. Hearty Chicken Enchilada Soup (4-6 servings)


Ingredients:


  • Chicken bone broth - 1 box

  • Enchilada sauce - 1 can

  • Chicken breast - 1-2 breasts, shredded or diced

  • Black beans - 1 can

  • Corn - 1 can

  • Green bell pepper - 1

  • Yellow onion - half, finely chopped

  • Garlic - 1 clove, finely chopped

  • Turmeric

  • Cumin

  • Paprika

  • Salt & pepper to taste

  • Option to top with: cheese, lime, avocado



Instructions:


Prep the Ingredients:


  • Finely chop half of a yellow onion, green bell pepper, and garlic clove


Cook the chicken (skip this step if doing vegetarian):


  • In a skillet, heat a little oil over medium-high heat.

  • Season the chicken breast lightly with salt, pepper, and a sprinkle of cumin and paprika if desired.

  • Add the chicken breast to the skillet and cook for 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is fully cooked.

  • Once cooked, remove from the skillet and let it rest for a few minutes, then shred or dice it.


Sauté the Aromatics:


  • In a large pot, heat a little oil over medium heat.

  • Add the chopped onion, green bell pepper, and garlic. Sauté until softened and fragrant, about 3-5 minutes.


Add the Spices:


  • Sprinkle in ½ teaspoon of turmeric and 1 teaspoon cumin.

  • Season with salt and pepper to taste.

  • Stir and cook for another minute to let the spices bloom.


Add the Liquids:


  • Pour in 1 box of chicken bone broth and 1 can of enchilada sauce. Stir to combine.


Add the Chicken:


  • Add the shredded or diced chicken breast into the soup.

  • Bring the soup to a simmer and let it cook for 15-20 minutes, allowing the chicken to cook through if raw.


Add the Beans and Corn:


  • Once the chicken is cooked, add 1 can of black beans (drained and rinsed) and 1 can of corn (drained).

  • Let the soup simmer for an additional 10 minutes to allow flavors to meld.


Adjust Seasonings:


  • Taste the soup and adjust the salt, pepper, and spices as desired.


Serve and Top:


  • Ladle the soup into bowls.

  • Optional toppings: Sprinkle with shredded cheese, squeeze of lime, and slices of avocado.


 

You can’t go through fall without enjoying a delicious apple with a hint of sweet maple syrup and spicy cinnamon - so here is a warm and cozy recipe just for you that can be enjoyed in the morning or as a little dessert! 


2. Sweetly Stewed Apples


Ingredients:


  • 3 large apples (Honeycrisp, Fuji, or Granny Smith work well), peeled, cored, and sliced

  • 1/2 cup water

  • 1-2 tablespoons maple syrup or honey (optional, for sweetness)

  • 1 teaspoon ground cinnamon

  • 1/4 teaspoon ground nutmeg

  • 1/4 teaspoon ground ginger (optional, for a spicier flavor)

  • Pinch of salt

  • Optional toppings: chopped nuts (like walnuts or pecans), a sprinkle of granola, or a dollop of yogurt


Instructions:


Prepare the Apples:


  • Peel, core, and slice the apples into thin, even slices.


Cook the Apples:


  • In a medium saucepan, add the water and sliced apples.

  • Stir in the cinnamon, nutmeg, ginger (if using), and a pinch of salt.

  • Drizzle in the maple syrup or honey if you'd like a bit of extra sweetness.


Simmer:


  • Bring the mixture to a gentle simmer over medium heat.

  • Cover the saucepan and reduce the heat to low.

  • Let the apples cook for 10-15 minutes, stirring occasionally, until they are tender and coated in a lightly thickened sauce.


Serve:


  • Spoon the stewed apples into bowls and add any desired toppings, such as chopped nuts, granola, or a dollop of yogurt for creaminess.


Sweetly Stewed Apples pair wonderfully with oatmeal, pancakes, or as a side to your favorite breakfast.


 

Last but not least, a nourishing beverage to sip as the rain falls outside your window on a lovely autumn day - a golden milk latte!


  1. Spiced Turmeric Golden Milk


Ingredients:


  • 1 cup of almond milk (or milk of choice)

  • 1/2 teaspoon ground turmeric

  • 1/4 teaspoon ground cinnamon

  • 1/4 teaspoon ground ginger

  • Pinch of ground black pepper (enhances the absorption of turmeric)

  • 1 teaspoon maple syrup or honey (optional, for sweetness)

  • Optional: a pinch of ground nutmeg or cardamom for extra warmth


Instructions:


Combine Ingredients:


  • In a small saucepan, combine the almond milk, turmeric, cinnamon, ginger, and black pepper.

  • Add the maple syrup or honey if you prefer a touch of sweetness.


Heat and Simmer:


  • Place the saucepan over medium heat and whisk the ingredients together.

  • Heat until warm, about 5 minutes, stirring occasionally. Avoid boiling.


Blend for Frothiness (Optional):


  • For a creamy, frothy texture, you can blend the mixture in a blender for 10-15 seconds.


Serve:


  • Pour the golden milk into a mug and sprinkle with a pinch of nutmeg or cardamom if desired.
